Ingredients
550 g chicken breast
1 tsp chilli powder
1/2 tsp salt or to taste
1/2 tsp black pepper powder
1 tsp garlic powder
1 tsp onion powder
2 tbsp olive oil
120 g sour cream
170 g mayonnaise
1 tsp garlic powder
1/2 tsp black pepper powder
1/2 tsp salt
1 1/2 tbsp sirracha sauce
1 tsp dijon mustard
1/2 cup carrots (julienned & finely chopped)
1 cup capsicum (green & red)
1/2 cup geen onion (chopped)
1/4 cup freshly chopped parsley
1 small red onion (chopped)
bread slices
cheddar or mozzarella cheese

Directions
- Marinate the Chicken:
In a bowl, combine the chicken with olive oil and all the marinade spices. Coat the chicken evenly using your hands. Cover and let it marinate for 30 minutes. - Cook the Chicken:
Heat a pan over medium heat. Place the marinated chicken into the hot pan and cook for 8–10 minutes per side, or until a golden brown crust forms and the chicken is fully cooked. - Shred the Chicken
Transfer the cooked chicken to a bowl. While still warm, use two forks (or a fork and knife) to shred the meat for the best texture. - Prepare the Sauce:
In a separate bowl, mix all the sauce ingredients until well combined. Set aside. - Mix Chicken Filling:
Add the chopped vegetables to the shredded chicken. Pour in the prepared sauce and mix thoroughly to combine. - Assemble the Sandwich:
Take two slices of bread. Spread a generous layer of the chicken filling onto one slice. Place cheese slices on the other slice. Close the sandwich and spread butter on the top slice. - Toast the Sandwich:
Heat a little butter in a skillet over medium-low heat. Place the sandwich in the pan and toast for 2–3 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese has melted. - Serve:
Remove from the pan and transfer to a serving plate. Slice in half, if desired, and serve hot with salad and chili sauce.
