Fluffy Homemade Pita Bread | Better Than Store-Bought
There’s nothing like the magic of homemade pita bread. Unlike store-bought versions, these puff up beautifully in the skillet. They create that signature pocket, perfect for stuffing with falafel, grilled meats, or fresh veggies. The outside is soft with a slight chew, while the inside forms a hollow pocket ready for your favorite fillings.
This recipe is beginner-friendly and requires no special equipment. All you need is a skillet and a little patience while the dough rises. With simple pantry staples like flour, yeast, and olive oil, you can make warm pita bread in just a couple of hours. Once you try this version, you’ll never want to buy packaged pita again.
One of the best things about pita is how versatile it is. Serve them warm straight from the skillet, or use them as a base for pita pizzas topped with your favorite sauce and cheese. You can cut them into wedges for dipping into hummus, tzatziki, or baba ganoush. They also make a great side for curries, soups, or grilled vegetables.
If you’re preparing a Middle Eastern–inspired meal, these pitas are a must. They pair perfectly with falafel, shawarma, or grilled kebabs. For a quick lunch, try stuffing them with roasted veggies and a drizzle of tahini. The pocket makes it easy to build sandwiches without the mess of traditional bread.
Homemade pita is also easy to store. Once cooled, keep them in an airtight bag at room temperature for a couple of days, or freeze them for longer storage. To reheat, simply warm them in a skillet or oven for a few minutes until soft and pliable again.
Whether you’re making a full feast or just want a fresh bread to serve at dinner, this pita recipe will become a staple in your kitchen. It’s simple, reliable, and always delicious.

minutesSoft, fluffy, and perfectly puffed pita bread made at home with just a few simple ingredients. Ideal for stuffing, dipping, or serving alongside your favorite dishes.
Ingredients
500 g (4 cups) all-purpose flour
10 g (2 tsp) salt
300 ml (1 ¼ cups) water, lukewarm
5 g (1 tsp) instant dry yeast
5 g (1 tsp) sugar
28 g (2 tbsp) olive oil
Directions
- Prepare the dry ingredient
- In a large mixing bowl, combine the flour and salt. Mix well.
- Activate the yeast
- In a separate bowl, whisk together the water, yeast, and sugar. Let sit for 5 minutes until slightly foamy.
- Make the dough
- Pour the yeast mixture into the flour. Add olive oil and mix until a rough dough forms.
- Initial kneading and resting
- Knead gently until combined. Cover and let rest for 10 minutes.
- After resting, fold the dough lightly for 2 minutes. Cover again and rest for another 10 minutes.
- Knead until smooth
- Knead the dough for about 5 minutes until smooth and elastic. Lightly brush with olive oil, place in a clean bowl, cover, and let rise for 1 hour or until doubled in size.
- Shape the dough
- Punch down the dough to release air. Divide into 8 equal portions (about 100 g each). Shape into balls, cover, and let rest for 15 minutes to relax the gluten.
- Roll out
- Roll each ball into a circle, about ¼ inch thick. Cover and let rest for 10 minutes to ensure proper puffing during cooking.
- Cook the pitas
- Heat a skillet over high heat. Place one pita on the skillet and cook for 15 seconds. Flip and cook the other side. Gently press the edges with a spatula—watch as it puffs up like a balloon.
- Serve
- Remove from the skillet and cover with a clean kitchen towel to keep soft. Repeat with the remaining dough. Serve warm.
