Spicy, tangy Buffalo chicken piled onto soft slider buns with melted cheese and ranch or blue cheese dressing, perfect for game day or a quick meal!

Ingredients

  • Marinade
  • 850 g chicken thigh (skinless & boneless)

  • 2 tbsp lemon juice

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp black pepper powder

  • 1 tsp chili powder

  • 1 tsp cayenne powder

  • 2 tbsp olive oil

  • Buffalo Sauce
  • 300g or 1 1/3 cup hot Sauce

  • 1 tsp garlic powder or minced garlic

  • 1 tsp chili powder

  • 20g (1) tbsp worcestershire sauce or you can use soy sauce as a substitute

  • 1 tbsp white vinegar

  • 130g (10) tbsp unsalted butter

  • pinch of salt

  • Other ingredients
  • 2 tbsp parsley

  • 300 g shredded Cheese or as required

  • any dinner rolls

  • ranch sauce

  • 30 g melted butter

  • 1 tbsp fresh Parsley (fresh green coriander)

  • 1 tsp minced garlic

Directions

  • Start by seasoning chicken with the marinade ingredients
  • Let marinade for 30 minutes. Cook the chicken until done.
  • Add the cooked chicken pieces to a bowl, add the Buffalo sauce ingredients & chopped fresh coriander. Mix well to combine and slice the rolls in half lengthwise.
  • Place the bottom half of the rolls onto a baking sheet lined with parchment paper.
  • Top with ranch and buffalo chicken.
  • Add the shredded cheese and place the top half of the roll over the cheese.
  • Bake at 250c for 10 minutes.
  • Next, In a small bowl, combine butter, garlic and parsley.
  • Mix well and brush the tops of the rolls. Bake it again for 5 minutes.
