Turkish Pide is a delicious, boat-shaped flatbread filled with a variety of savory toppings like minced meat, cheese, or vegetables. Often referred to as ‘Turkish pizza,’ it’s a popular street food known for its crisp crust and flavorful fillings.

Ingredients

  • 120 ml water

  • 240 ml warm milk

  • 15 g sugar

  • 8 g dry Yeast

  • 40 g olive oil

  • 540 g all-purpose flour

  • 6 g salt

  • Filling
  • 2 tbsp olive oil

  • 1 tbsp minced garlic

  • 200 g chopped onion

  • 400 g minced meat (you can choose mutton, beef or chicken)

  • 1 tsp paprika powder

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • 1 tsp oregano

  • 1 tsp chilli powder

  • tsp turmeric powder

  • 1 tsp black pepper powder

  • 1 tsp salt

  • 75 g tomato paste

  • 3 tbsp fresh coriander chopped

  • 1 egg

  • 400 g mozzarella cheese

  • 260 g feta cheese or cottage cheese

  • 3 tbsp fresh coriander chopped

  • 1 tsp dried parsley

  • 1 tsp aleppo pepper or chilli pepper

Directions

  • In a large bowl, add warm water, warm milk, sugar, active dry yeast, and olive oil. Whisk well until combined.
  • Sift in all-purpose flour and salt. Mix the dry ingredients together before incorporating them into the wet mixture
  • Stir until a dough forms, then knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with cling wrap, and let it rise for 60 minutes or until doubled in size.
  • Prepare the Filling
  • In a skillet, heat some olive oil over medium heat.
  • Add garlic paste and saut for 2 minutes until fragrant.
  • Add chopped onion and saut until soft and translucent.
  • Add minced meat and cook for 3-4 minutes, or until the water from the meat has evaporated.
  • Stir in the spices (ground cumin, paprika, salt, and pepper) and tomato paste. Cook well, ensuring the flavors combine thoroughly.
  • Lastly, add fresh coriander, mix well, and turn off the heat.
  • Set the filling aside to cool slightly before using it to assemble the Pide.
  • Shape the Pide and Assemble
  • Punch down the dough on a surface to release the air. Divide the dough into 6 equal pieces and let them rise for 15 minutes.
  • Meanwhile, in a separate bowl, combine feta cheese, mozzarella cheese, dried parsley, fresh coriander, and Aleppo pepper. Mix well and set aside.
  • Take a dough ball and roll it out into an oval shape on a floured surface.
  • Spread the cheese filling along the edges of the dough, then fold the sides to create a boat shape, pinching the ends.
  • Place the meat mixture in the middle of the dough boat and top with the cheese mixture.
  • Apply an egg wash on the folded sides of the dough, and sprinkle sesame seeds and nigella seeds on top.
  • Bake at 250C (482F) for 12-15 minutes or until the crust is golden and crisp.
