Ingredients
650 g Chicken Breast & Thigh Mix ((washed & dried))
2 tbsp Mayonnaise
1 tsp Blackpepper
1 tsp salt
1 tbsp onion powder
Directions
- Make the Nugget Mixture:
1. In a food processor, add the chicken pieces along with salt, black pepper, onion powder, garlic powder, chili powder, sugar, mustard, vinegar, mayonnaise, bread slices, and milk.
2. Blend until you get a smooth, sticky mixture. Taste and adjust seasoning as needed. - Shape the Nuggets:
1. Lightly grease your hands with a little oil to prevent sticking. Take small portions of the mixture and shape into oval or round nuggets, about 2 inches each.
2. Place the nuggets on a tray lined with parchment paper and chill in the fridge for 30 minutes.(You should get around 35 nuggets, each weighing about 25g.) - Prepare the Coating Stations:
Bowl 1: All-purpose flour
Bowl 2: Beaten eggs
Bowl 3: Panko breadcrumbs - Bread the Nuggets:
Remove chilled nuggets from the fridge. Coat each nugget in flour, then dip into the egg mixture, and finally coat with breadcrumbs. Repeat for all nuggets. - To Freeze:
Place coated nuggets in a single layer in a container lined with parchment. Freeze for up to 3 months - Fry the Nuggets:
Heat oil in a deep skillet or pan to 350°F (175°C). Fry nuggets in batches for 3–4 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan. - Drain and Serve:
Remove and place on a paper towel or wire rack to drain excess oil. Serve hot with your favorite sauces!
