Ingredients

  • 500 g (4 cups) all-purpose flour

  • 10 g (2 tsp) salt

  • 300 ml (1 ¼ cups) water, lukewarm

  •  5 g (1 tsp) instant dry yeast

  •  5 g (1 tsp) sugar

  • 28 g (2 tbsp) olive oil

Directions

  • Prepare the dry ingredient
  • In a large mixing bowl, combine the flour and salt. Mix well.
  •  Activate the yeast
  • In a separate bowl, whisk together the water, yeast, and sugar. Let sit for 5 minutes until slightly foamy.
  •  Make the dough
  • Pour the yeast mixture into the flour. Add olive oil and mix until a rough dough forms.
  • Initial kneading and resting
  • Knead gently until combined. Cover and let rest for 10 minutes.
  • After resting, fold the dough lightly for 2 minutes. Cover again and rest for another 10 minutes.
  • Knead until smooth
  • Knead the dough for about 5 minutes until smooth and elastic. Lightly brush with olive oil, place in a clean bowl, cover, and let rise for 1 hour or until doubled in size.
  •  Shape the dough
  • Punch down the dough to release air. Divide into 8 equal portions (about 100 g each). Shape into balls, cover, and let rest for 15 minutes to relax the gluten.
  •  Roll out
  • Roll each ball into a circle, about ¼ inch thick. Cover and let rest for 10 minutes to ensure proper puffing during cooking.
  • Cook the pitas
  • Heat a skillet over high heat. Place one pita on the skillet and cook for 15 seconds. Flip and cook the other side. Gently press the edges with a spatula—watch as it puffs up like a balloon.
  • Serve
  • Remove from the skillet and cover with a clean kitchen towel to keep soft. Repeat with the remaining dough. Serve warm.
